This is a basic mead, made with only honey, water and yeast. It’s a great starting point for anyone interested in trying their hand at mead. You can also double or triple this recipe to make more and then add flavors like fruit or spices in secondary.
Traditional Mead

2 lbs of honey
Bentonite
Fermax yeast nutrient
Red Star Premier Classique Yeast
One gallon glass jug
Directions
- Put 2 lbs of honey and 4 cups of water in a small pot and head until the honey has dissolved
- Add honey water mixture to gallon jug
- Add 9 cups of additional water
- Stir to ensure honey is dissolved
- Take a hydrometer reading – SG should be 1.075
- Add 1/4 tsp bentonite
- Add 1/4 yeast nutrient
- Add Premier Classique yeast
- Stir or shake until ingredients are well mixed
- Ferment until the hydrometer reads 1.000 or less
- Rack into a clean glass jug, leaving behind any yeast that has fallen to the bottom
- Leave until clear or use Sparkolloid as directed for faster clearing
- Add Potassium Sorbate and Campden tablet (if desired for stabilizing)
