This mead has a lovely light fruit and floral taste, thanks to the pomegranate white tea. If you prefer your mead drier, use EC-1118 yeast, otherwise use Premier Classique for a fruitier flavor. If you can’t find pomegranate white tea, you can use Bigelow Green Tea with Pomegranate instead.
Pomegranate White Tea Mead

5 pomegranate white tea bags (Full Circle brand)
5 cups of honey
Bentonite
Fermax yeast nutrient
Red Star Premier Classique yeast or Lalvin EC-1118 yeast (your preference)
One gallon glass jug
Directions
- Simmer 5 tea bags in 8 cups of water for 30 minutes
- Remove tea bags and let cool slightly so it’s still warm
- Add 8 cups of water to gallon jug
- Add warm tea to gallon jug
- Add 5 cups of honey and stir until dissolved
- Take a hydrometer reading – SG should be 1.075
- Add bentonite
- Add yeast nutrient
- Add yeast (your preference)
- Stir or shake until all ingredients are mixed
- Ferment until the hydrometer reads 1.000 or less
- Rack into a clean glass jug, leaving behind any yeast that has fallen to the bottom
- Leave until clear or use Sparkolloid as directed for faster clearing
- Add Potassium Sorbate and Campden tablet (if desired for stabilizing)
